This Standard is prescribed in accordance with the provision of Article 17 of the Act Governing Food Safety and Sanitation.
The types of shell eggscan be used for makingliquid eggs:
1. The eggshell is intact without cracks.
2. The eggshellis cracked:The eggshell is damaged butthe shell membrane is intact, without eggshell surface contamination and contentsleakage.
Theeggs with broken shell are not permittedfor making liquid eggs.
Salmonellamust not be detectedin pasteurizedliquid eggs.
The total plate countmust bebelow 106CFU/g inunpasteurizedliquid eggs.
This standard shall be implemented from 01, 01, 2020.
